Mediterranean Kofta Kebabs, Hummus and Salad

Invite some friends around this weekend and make them our delicious Mediterranean Lamb Kofta Kebabs, you can’t go wrong…..


Mediterranean Kofta Kebabs -

1Kg lamb finely chopped.

2 Garlic cloves minced.

1 Heaped tablespoon chilli power.

1 Heaped tablespoon cumin.

1 Heaped tablespoon dried oregano.

Good large pinch of salt & pepper.

Juice of one lemon.

Mix all of the above in a blender. Divide into 10 equal balls. With damp hands roll the balls into sausage shapes. Cook in a grill pan if you have, or a normal pan with a little olive oil. If you are going to cook on the BBQ, soak the skewers first in water to avoid burning.


Hummus – you can buy Hummus, or it’s also super simple to make.

2 Jars of chickpeas (keep the liquid from the jars).

100ml extra virgin olive oil.

4 Teaspoons Tahini paste

2 Garlic cloves minced.

Juice of one lemon.

Chopped fresh parsley.

Pinch of salt.

Wash the chickpeas in cold water and drain. Add all of the above in a food processor (EXCEPT the olive oil) and about 80ml of the liquid from the jars. Start mixing and slowly pour in the oil until it becomes smooth and creamy. Drizzle with extra virgin olive oil and smoked paprika.


Salad -  

Chop some small cherry tomatoes in half.

Chop cucumber into small cubes.

Finely slice a red onion.

Drizzle with extra virgin olive oil.


Greek Yoghurt Sauce –

Greek natural yoghurt.

Chopped fresh parsley.

1 Minced garlic clove.

Extra virgin olive oil.

Salt to taste.


Serve with hot pita or crusty bread and a refreshing HAYES Mediterranean Gin and Tonic. Quick, simple, delicious Mediterranean living….


Gambas Pil Pil (Spanish Garlic & Chilli Prawns)

Today's Mediterranean Recipes is Gambas Pil Pil (Spanish Garlic & Chilli Prawns) This dish is SUPER QUICK, SIMPLE AND DELICIOUS..!
STEP 1.) Put in a earthenware or clay dish (or pan) the following:
- 60ml Spanish extra virgin olive oil.
- 4 Cloves garlic, thickly sliced.
- 1 Red chilli seeded and thinly sliced.
Simmer for 1 minute so the garlic and chilli flavor infuses in the oil.
STEP 2.) Add:

- 10 or 12 Raw peeled king prawns.
- 1 teaspoon ground paprika powder.
Cook for about 4 minutes, until the prawns turn pink.
STEP 3.) Remove from the heat and add:
- Pinch of sea salt
- Fresh finely chopped parsley
- Small squeeze of lemon.
Serve with fresh crusty bread and HAYES Mediterranean G&T.
Eat the prawns as you dip the crusty bread in the warm garlic oil.... Yummmmy 



There are many great food pairings with a classic gin & tonic, one of our favorites is goats cheese. Today’s Mediterranean recipe is a very simple and delicious goats cheese salad that goes perfectly with our HAYES Mediterranean Gin.
We like to caramelise the goats cheese by drizzling with olive oil, sprinkling with brown sugar and placing under the grill for a few seconds.
- Fill a bowl with mixed lettuce. 
- Top with thick slices of goats cheese.
- Sprinkle with walnuts.
- Drizzle with balsamic vinegar reduction.
Optional fresh apple slices.
Serve with HAYES Mediterranean Gin in a bowl glass with lots of ice.
